Spring is here with vegetable dumplings

I decided to celebrate the arrival of spring by making vegetable dumplings. I decided not to use a recipe; I experimented in the kitchen. I diced up some shitake mushrooms, cremini mushrooms, scallions, carrots, radishes, cabbage, and grated fresh ginger. I put some soy sauce and teriyaki sauce in with the veggies and stir-fried them. I put the mix in wonton wrappers and folded and steamed them. (I learned to use Pam to keep them from sticking). I also made a tasty dipping sauce by mixing soy sauce, chili sauce, chili pepper (ancho and red chili) with ginger, scallions, and orange marmalade. We also had some fried rice to fill our bellies with carbs. It was so good! Luckily the meal was low in fat and full of fresh veggies. The worst thing about the meal was the soy sauce and the "fried rice" which was actually boiled because we are trying to eat healthfully. It was delicious.

Today I noticed the tree in the front of our house has beautiful red buds on it. I will take some pictures when it goes into bloom. This Spring is refreshing. Usually I love the winter, but I guess I am over the winter now. I am excited to take Sebastian outside and get the smell off him.
